Sure it is. You can change it in conversion settings on iPhone and by tapping on video preview on iPad.
Have you tried temporarily disabling the windows firewall?
Have you tried doing a reinstall of the JRE?

subtitle language in MKV is encoded as ISO-639-2 code, there don't seem to be two separate codes for traditional/simplified Chinese I'm afraid.
Air Video currently doesn't support closed captions in WTV files.
Does bonjour work with other applications? (i.e. iTunes home sharing)

MKV with subtitles should always have the subtitle tracks encoded in UTF-8.

Please post here the live conversion log. Also buffering issues on remote WiFi are usually bandwidth related.

We are working on new conversion pipeline that should address this, but it involves a major upgrade in client and server so it will take time.
We will have password protected folders, but I don't think we'll go as far as quotas.

the issues with iOS 5 has been introduced by Apple in the media player implementation. There is not much we can do about it. We are working on a update though (no ETA)
